  • 1 medium head cauliflower, cut into florets
  • About ½ red onion, chopped
  • 4 dates, finely chopped
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp maple syrup
  • 2 Tbsp olive oil
  • About 2 Tbsp Coffee Steak Rub

Directions

  1. Cut the cauliflower, red onion, and dates and place on a baking pan.
  2. Drizzle with balsamic vinegar, maple syrup, olive oil, and Coffee Steak Rub.
  3. Bake at 375°F until the desired tenderness is reached.

Coffee Steak Rub (Fresco Spice Blends): coffee, brown sugar, chili powder, red pepper flakes, unrefined sea salt & spices. Brown sugar is second on the label, so this one is sweeter than most rubs, and that last “& spices” isn’t itemized by the maker, so check the label if you’re avoiding something specific. To mix a similar blend, about 2 Tbsp: 1 Tbsp finely ground coffee, 2 tsp brown sugar, 1 tsp chili powder, and ½ tsp red pepper flake. Brown sugar scorches over high heat, so keep the oven moderate.
