Ingredients

  • 3 eggs
  • 1 cup pumpkin
  • ½ cup whole milk
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup whole-wheat flour (or gluten-free all-purpose mix)
  • 1 tsp coconut oil
  • Cinnamon
  • Pure maple syrup

Directions

  1. Place the eggs, pumpkin, milk, baking powder, salt, and flour in a mixing bowl and stir until smooth.
  2. Preheat a nonstick skillet over medium heat and melt the coconut oil.
  3. Pour batter a scant ¼ cup at a time; cook until the edges are dry, then flip and brown the other side.
  4. Sprinkle with cinnamon and serve with syrup.
