Overnight Pumpkin Oats
No-cook · ~5 min + overnight chill · Serves 2 · about ¾ cup each
Ingredients
- ½ cup rolled oats, uncooked (old-fashioned; not steel-cut or instant)
- ½ cup whole milk
- 2 Tbsp plain Greek yogurt
- ¼ cup pumpkin purée (not pie filling)
- 1 Tbsp chia seeds
- ½ tsp vanilla extract
- 1½ tsp Apple Pie Spice
- Honey to taste
Directions

- Add all ingredients to a mason jar or small container and stir to combine.
- Seal and refrigerate overnight, or at least 4–6 hours.
- Eat cold, or warm in the microwave 1–2 minutes. Add your favorite toppings.

Apple Pie Spice (Fresco Spice Blends): cinnamon, nutmeg, allspice, cloves. It’s seasonal and sometimes sold out. An equal mix of those four does the job. Check the label if you’re avoiding something specific.
Spice blend: Fresco Spice Blends Apple Pie Spice (cinnamon, nutmeg, allspice, cloves). To mix a similar blend, about 1 Tbsp: 2 tsp ground cinnamon, ½ tsp ground nutmeg, ¼ tsp ground allspice, and ⅛ tsp ground cloves. Cloves take over quickly, so start light.
