Orzo with Spinach and Pine Nuts BfG
Stovetop · ~25 min · Serves 4 · ~¾ cup each
Ingredients
- 2 Tbsp pine nuts
- 1 clove garlic, minced
- 1 tsp butter, melted
- 1¾ cups water
- ¾ cup uncooked whole-wheat orzo (rice-shaped pasta)
- ¼ tsp salt
- 1 cup tightly packed chopped fresh spinach
- ¼ cup grated Parmesan cheese
Directions

- Toast the pine nuts in a small skillet over medium heat 1–2 minutes, stirring often; set aside.
- Sauté the garlic in the butter over medium heat 1 minute.
- Add the water, orzo, and salt; bring to a boil, then reduce heat and cook about 12 minutes, until the liquid is absorbed.
- Stir in the spinach, Parmesan, and pine nuts. Serve hot.
