Mexican Salad in a Jar

Ingredients

  • Salsa of your choice
  • ¼ cup no-salt-added sweet corn, drained
  • ¼ cup no-salt-added black beans, drained and rinsed
  • ¼ cup tomatoes
  • 2 Tbsp diced sweet onion
  • ½ cup chopped pepper (color of choice)
  • Chopped cilantro to taste (fresh is best here; dried does not substitute well)
  • 2 handfuls of fresh spinach

Directions

  1. Place the desired amount of salsa in the bottom of a mason jar.
  2. Layer the corn, black beans, tomatoes, onion, and pepper.
  3. Add cilantro and top with the spinach.
  4. Seal and refrigerate; shake to blend when ready to serve.
