Mexican Salad in a Jar

Ingredients
- Salsa of your choice
- ¼ cup no-salt-added sweet corn, drained
- ¼ cup no-salt-added black beans, drained and rinsed
- ¼ cup tomatoes
- 2 Tbsp diced sweet onion
- ½ cup chopped pepper (color of choice)
- Chopped cilantro to taste (fresh is best here; dried does not substitute well)
- 2 handfuls of fresh spinach
Directions

- Place the desired amount of salsa in the bottom of a mason jar.
- Layer the corn, black beans, tomatoes, onion, and pepper.
- Add cilantro and top with the spinach.
- Seal and refrigerate; shake to blend when ready to serve.
