Ingredients

  • 6 eggs
  • ¼ cup whole milk
  • ¼ cup cheese of choice (feta, cheddar, etc.)
  • ½ cup diced vegetables (spinach, mushrooms, bell peppers, onion, etc.)
  • ¼ tsp cracked black pepper
  • Salt to taste

Directions

  1. Preheat the oven to 350°F.
  2. In a bowl, whisk together the eggs, milk, salt, and black pepper.
  3. Stir the diced vegetables into the egg mixture.
  4. Pour into an oiled baking dish and sprinkle the cheese on top.
  5. Bake 20–30 minutes, until fully set and cooked through. Serve warm.
