Chicken Parmesan BfG

Ingredients
- 6 boneless, skinless chicken breast halves
- About 1 cup Italian bread crumbs (make your own by processing whole-wheat bread with Penney’s Little Italy blend)
- ½ cup grated Parmesan cheese
- About ½ cup Italian salad dressing (use a healthy, low-fat choice; dilute with vinegar if needed)
- 1–2 tsp olive oil (for the pan)
Directions

- Pound the chicken lightly between wax paper, just to even it out.
- Combine the bread crumbs and Parmesan in a shallow bowl.
- Dredge each breast in Italian dressing to coat, then in the crumb mixture.
- Place in a 9×13-inch dish lightly coated with olive oil and bake at 400°F about 30 minutes, until cooked through.

Penney’s Little Italy (Fresco Spice Blends): oregano, garlic, basil, unrefined sea salt, red pepper flake. Check the label if you’re avoiding something specific. To mix a similar blend, about 1 Tbsp: 1½ tsp dried oregano, 1 tsp dried basil, ½ tsp garlic powder, and ¼ tsp red pepper flake. Salt to taste.
