Bryce’s Beans
Slow cooker · ~5 hr + 6–8 hr soak · Serves 10 · about ½ cup each
Ingredients
- 1 lb dry pinto beans
- 5 cups water
- ⅔ Tbsp cumin
- ⅔–1 Tbsp Southwest Chipotle Blend (to taste)
- 1 Tbsp chili powder
- ½ Tbsp salt
- 2 cloves fresh garlic, minced
- ½ cup white onion, finely chopped
Directions

- Pick through the beans for debris, rinse, and place in a large bowl. Cover with about 2 inches of water and soak 6–8 hours or overnight.
- Drain the beans and add to a slow cooker. Cover with about 2 inches of fresh water (about 5 cups).
- Add the cumin, Southwest Chipotle Blend, chili powder, salt, garlic, and onion.
- Cook on high about 5 hours, until the beans are tender.

Southwest Chipotle blend (Fresco Spice Blends): chili powder, cilantro, cumin, onion, garlic, smoked brown chipotle, smoked paprika, unrefined sea salt, pepper & spices. That last “& spices” isn’t itemized by the maker, so check the label if you’re avoiding something specific. To mix a similar blend, about 2 Tbsp: 1 Tbsp chili powder, 1½ tsp ground cumin, 1 tsp smoked paprika, ½ tsp garlic powder, ½ tsp onion powder, and ¼ tsp chipotle or cayenne. Salt to taste.
